1/2 Marathon & Hummus Salad

Gah! It’s Tuesday evening, and this post was supposed to be done by Monday morning at the latest. Whoops! I’ll chalk it up to a busy but fun few weeks.

We started off last week on a quick 4 day cruise. A much needed break for both of us, even as a work trip!

We stopped in Catalina Island on Tuesday, which honestly wasn’t as fun as I expected. Thanks to StepBrothers and the infamous Catalina Wine Mixer scene, I was really excited to visit Catalina! Besides eating and souvenir shops, I just didn’t feel like there was that much to do. We hit up mini golf and headed back to the boat to catch some afternoon rays.


An afternoon in Mexico isn’t quite complete without fresh fruit margaritas the size of your head! Naturally, we obliged- mango for BL and strawberry for me. Along with a giant plate of fresh guacamole and homemade chips that I was too busy chowing down on to take a photo. I’ve said it before and I’ll say it again, if I wasn’t worried about a nutrient deficiency I could live on chips and guac.

We arrived back home on Friday night and geared up for our first 1/2 marathon of the year on Sunday. While race day was the perfect mixture of excitement and anticipation, I have really enjoyed the training that led up to this point. I tried thinking of our runs as a bonus weekend date. Sunday morning long run together, usually followed by making brunch and relaxing on the couch afterwards. I think we are going to keep up our training even though we don’t have anything scheduled for a while. I’ve been throwing around the idea of a marathon at the end of the year, so we’ll see if this is the year I finally get the guts to just do it.

Since the two month countdown to the wedding has officially started, we have begun cleaning up our diet a bit and trying to really pack in the vegetables. As I’ve mentioned before, I’m not really trying to lose weight but I want to feel my best- and look my best– so I think that trading in our usual carb heavy dinners for lighter salads packed with vibrant greens should do the trick.

My new favorite: the hummus salad with quick falafel patties. So quick and easy to put together, it’s almost silly to write a recipe. I’m not really a huge fan of bagged salad mixes but for convenience, it can’t be beat. I’ll toss that with my hummus dressing and these falafel patties. I make a batch of some type of burger/patty almost weekly and I’ve been loving this quick and simple recipe from Food Network. They also freeze really well so don’t hesitate to make a bunch and stick in the freezer for moments when you don’t feel like cooking.

This hummus dressing is so, so good. I love it as a dip, as a sandwich spread, a salad dressing or as a no-cook pasta sauce.

DK’s Hummus Dressing:

  • 1/2 cup hummus (homemade or store bought)
  • 2 tbsp. extra-virgin olive oil
  • 2 tbsp. water
  • 1 tablespoon lemon juice

Whisk together all ingredients in a small bowl. Season to taste with salt and pepper.
