Are we still loving vegetable noodles? I received an email request a few weeks ago from a reader asking for more veggie noodle recipes (also, more than just zucchini). While I’ve got a few of my own, I know this is an are that I need to do more development in. So, I reached out to some favorite blogger friends and asked for their best vegan and vegetarian noodle recipes.

1. Mediterranean Zucchini Noodles {vegetarian & gluten-free}
This noodles are one of my favorite light summer meals. Zucchini noodles tossed with olives, tomatoes and feta.

I forget how delicious sweet potato noodles are. While I typically favor zucchini or cucumber in the summer, sweet potato noodles are a delicious alternative. Try them in this creamy coconut version.

You can make turnips into noodles! These recipe is absolutely genius, a must try.
19. Zucchini Papperdelle with Roasted Tomatoes and Basil {vegan & gluten-free}
You don’t need a spiralizer to make this recipe, just a standard vegetable peeler.
20. Spaghetti Squash Pad Thai {vegan & gluten-free}
Pad Thai is one of my favorite recipes, I love this version featuring spaghetti squash noodles and crispy tofu.
