Air Fryer Potato Skin Nachos! Crispy, cheesy potatoes with tempeh bacon, sour cream, salsa and fresh herbs. Vegetarian and easily vegan.

Who’s ready for game-day? I always feel a little disingenuous talking about game-day food because as you well know, I could care less about any sport that’s played on television. My husband, however? Well, that’s a different story.

Every Football Sunday morning BL kindly asks me what kind of snacks I have on planned for him. It’s his one time during the week where he gets to relax and enjoyed some ‘me time’ and I’m more than happy to set some food out in front of him and let him rest and recharge his batteries in his favorite position: reclined on the couch with the Packer’s game on.

This year I’ve been focused on easy snacks that don’t take too much effort to put together; mostly because I’m 8 months pregnant and really don’t want to be on my feet any more than I have to. It’s why I’ve been so focused on using my Air Fryer to whip up some of our favorites, like these buffalo cauliflower wings and tofu nuggets.

How to Make Vegan Air Fryer Potato Skins

These Air Fryer Potato Skin Nachos came together as a happy accident. I wanted to see how my favorite Little Potato Company potatoes would work in the Air Fryer, right around the time that BL asked what I could whip up for lunch. Um, how about nachos?

After getting the potatoes very crisp, I added in shredded cheese and put the tray back in the Air Fryer to melt just slightly. Then I took the whole thing out, placed it on a large plate and covered it with BL’s favorite toppings: crumbled tempeh bacon, salsa and fresh chives.

We’ve been working on eating more dairy-free these days, which is why you’ll find recommendations for both dairy-free sour cream and cheese in the ingredient list but know that regular also works.

For the tempeh bacon, you are welcome to make your own (my recipe here) or buy it already marinated and then fry until crispy and crumbly. I’ll let you guess which way I went and you are 100% correct if you said bought. I’m all for the path of least resistance these days.

Little Potato Company potatoes really are the best for crispy fried potatoes because of their thin skin and creamy inside. I also love that I don’t have to do much prep: open the bag, gently rinse, then halve and fry. Couldn’t be easier and I adore that I don’t have to spend any time dicing the potatoes or peeling them.

Ingredients

  • 1.5 pound The Little Potato Company Blushing Belle potatoes, halved
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/2 cup shredded cheese of choice (I used a dairy-free shredded cheese for a vegan version)
  • 3/4 cup cooked, crumbled tempeh bacon
  • salsa, for serving
  • Sour cream, for serving (dairy-free for vegan version)
  • 1/4 cup fresh chives, chopped

Instructions

  1. Toss the halved potatoes with olive oil, salt, chili powder and paprika until well coated. Place in a single layer in the bottom of an Air Fryer and cook for 15 minutes at 400 degrees F, tossing once halfway through.
  2. When the potatoes are finished cooking, quickly remove the base of the Air Fryer and sprinkle on the cheese. Return back to the Air Fryer and let warm for 1-2 minutes so the cheese just melts.
  3. Transfer the cheesy, crispy potato halves to a large serving bowl or platter and sprinkle with cooked tempeh bacon. Drizzle with salsa, sour cream and fresh chives. Serve immediately!
