I have always been a big fan of cinco de mayo. Any holiday that I get to celebrate with guacamole and tacos get’s a big A+ in my book. That being said, I avoid our local mexican restaurants like the plague around this time. I prefer to celebrate in the comfort of my own home, away from the crowds, where I can enjoy all the avocado & margaritas that I want.
I haven’t decided exactly what we will be having on Monday, but I’m sure it will be a combination of some of the above fare. What’s are your menu?

I must admit, I usually forget about Cinco de Mayo until it’s too late, thus missing out on all the festivities. Thanks to your inspiring list though, the holiday never sounded so delicious- There’s no way I’ll forget this year!
All these recipes are right up my alley. I love Mexican food. I’m definitely going to have to make some tacos and guac for dinner on Monday!
