Ingredients

  • 1 1/4 cup white whole-wheat flour
  • 1/2 cup wheat germ
  • 1/2 cup rolled oats
  • 1 tablespoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup almond milk
  • 1 teaspoon apple cider or white wine vinegar
  • 2 ripe bananas
  • 1/3 cup neutral oil
  • 1/3 cup 100% pure maple syrup
  • 1 1/2 teaspoons pure vanilla extract
  • 1/3 cup golden raisins
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Whisk together the almond milk and apple cider vinegar and set aside to let curdle for ~5 minutes.
  3. Whisk together the flour, wheat germ, oats, cinnamon, ginger, nutmeg, baking powder, and salt in a large bowl; set aside.
  4. Place the bananas, oil, maple syrup, vanilla extract and almond milk mixture in a food processor and puree until creamy.
  5. Add to the flour mixture and stir until just combined. Fold in the pecans and raisins.
  6. Lightly spray/grease a muffin pan and fill to the top with the mixture, you should get about 10 muffins.
  7. Bake for 26-27 minutes until a toothpick comes out clean. Let cool and serve! These should keep for 2-3 days covered in an air-tight container.
