Ingredients

  • 2 cups brown or green lentils, rinsed and picked through to remove any debris
  • 3 1/2 cups vegetable broth
  • 1/2 cup red salsa of choice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/23/4 teaspoon salt, as needed
  • 8 warmed tortillas
  • Taco toppings of choice (we love shredded lettuce, chopped tomatoes, jalapenos and shredded cheese (regular or dairy-free)

Instructions

  1. Place the lentils, vegetable broth, salsa and spices in the base of an instant pot or pressure cooker and seal. Hit the manual button and cook on high pressure for 16 minutes.
  2. Quick release, then stir. Add the salt, then taste to adjust. Depending on the saltiness of your broth, then you may need more or less salt. I typically use a low sodium broth and then add salt to taste.
  3. Serve on warmed tortillas with toppings of choice.
