Ingredients

  • 1 lb. spaghetti or linguini
  • 4 1/3 cups water
  • 10 oz. mushrooms, sliced
  • 3 cups spinach leaves
  • 1 cup frozen peas
  • 2 cloves garlic, thinly sliced
  • 1/4 tsp. red pepper flakes
  • 1 tsp. dried italian seasoning
  • salt/freshly ground pepper
  • 1/2 cup heavy cream, cashew cream, or milk
  • 1/2 cup parmesan cheese, vegan or regular

Instructions

  1. Place all ingredients except for the cream and cheese in a large saucepan.
  2. Bring to a boil then reduce heat to a simmer for cook for 10 minutes until the pasta is al dente, stirring occasionally.
  3. Once pasta is cooked, remove from heat and stir in a pinch of salt, freshly ground pepper, milk/cream, and cheese.
