Ingredients

  • 3 cups sliced peaches
  • 2 cups sliced plums
  • 1/4 cup sugar
  • 2 tbsp. flour
  • 1/4 tsp. grated nutmeg
  • 1 tbsp. thyme leaves (sub 1 tsp. dried thyme leaves)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 cup whole wheat pastry flour (can sub other flour)
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil, melted
  • Ice Cream, for serving

Instructions

  1. Preheat oven to 375 degrees F.
  2. Combine the peaches, plums, sugar, 2 tbsp. flour, nutmeg and thyme leaves in a bowl.
  3. Lightly spray a casserole dish with cooking spray and add fruit.
  4. Combine oats, brown sugar, flour, salt and melted coconut oil. Stir together until crumbly and sprinkle oat mixture over the fruit. Bake for 30-35 minutes until golden browned.
  5. Let cool slightly, about 10 minutes and serve with ice cream.
