Pumpkin Maple Overnight Oatmeal (make in the slow cooker)

Start your weekend off right with this pumpkin-maple overnight oatmeal. Don’t have a crock pot? No worries, just combine all ingredients on the stove and cook until oatmeal is tender.

  • 1/3 cup 100% pure maple syrup
  • 1/2 cup steel cut oats
  • 1/2 cup pumpkin puree
  • 1/4 cup chopped nuts (walnuts or pecans work best)
  • 1 tsp. vanilla extract
  • 2 tsp. pumpkin pie spice
  • 1/8 tsp. salt
  • 2 cups water (can sub dairy-free milk if you want a creamier oatmeal)


  1. Combine all ingredients together in the base of a crockpot bowl.
  2. Place on low, cover and cook 6-8 hours until done.
  3. In the morning, stir oatmeal with a fork to loosen the steel cut oats and make sure everything is fully incorporated.
  4. Top with more pure maple syrup, walnuts or splash or two of cold milk and enjoy!


For easier clean-up and to avoid the slight “crusty” residue inside the slow cooker, place all ingredients in a glass bowl that fits into the slow cooker then add enough water to fill the lower half of the slow cooker. Cover and cook on low for 6 to 8 hours.
