The best vegetable side dish or appetizer! Roasted Curry Broccoli Florets with a curry dipping sauce!

Ingredients
1 bunch broccoli, cut into florets
2 tsp. oil
2 tsp. curry powder, divided
1/4 tsp. cayenne pepper, divided
1/2 tsp. cumin
1/2cup mayo (use Veganaise for vegan version)
1 lime, zest and juice
1 garlic clove, finely minced
salt/pepper
Instructions
Preheat the oven to 400 degrees F.
Toss the broccoli florets with oil, 1 tsp. curry powder, 1/8 tsp. cayenne pepper, cumin and a pinch of salt and pepper. Using your hands, rub all of the spices on the broccoli so that each floret is coated.
Place on a baking sheet and roast for 18-20 minutes, flipping halfway through.
Mix together mayo, lime juice and zest, garlic clove, remaining cayenne pepper and curry powder.
Remove broccoli when crispy and roasted and dip into the curry sauce!
