Happy Labor Day! I hope you are having a great weekend. I’m currently sitting on the back porch, coffee cup in one hand, avocado toast in the other. In between bites, I’m planning out or menu for the week, writing this post and trying really hard not to click on the emails flooding my inbox this morning for Labor Day sales.

What’s on your menu for today? Since we’ve eaten out for most of the weekend, I’m planning a simple BBQ with just BL and I- veggie burgers on the grill, corn on the cob, salad and probably a brownie or two. With this spicy green sauce piled high on everything- except dessert.

After a recent TV appearance last week I was swimming in avocados; which is a very good problem to have. I swear I’ve eaten avocado toast for the last week straight, mixed in with avocado smoothies, guacamole and this spicy green sauce.

I wasn’t really sure how this was going to come out, a quick attempt to create a sauce for a roasted sweet potato lunch. I knew avocado would work, but how about my other favorite green things: parsley, jalapeno and pistachios? Spoiler alert: you’re going to put this green sauce on just about everything.

Texture-wise, it’s a mix between guacamole and pesto. Creamy, herby with a bit of kick. Sandwiches, tacos, grilled tofu, salads, and on and on and on. If pesto or avocado will work, then this spicy green sauce will too.

Did I mention that it’s ready in just 5 minutes? Place all ingredients in a food processor or blender, puree and done. It’s a holiday so I’m not going to ramble as much as I usually do. Enjoy your day, make this sauce, slather on everything.

Ingredients

  • 2 small ripe avocados
  • 1/2 cup parsley
  • 2 limes, juiced (about 1/4 cup)
  • 1 jalapeno
  • 1/3 cup shelled pistachios
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper

Instructions

  1. Place all ingredients in a blender or food processor, puree until creamy. I kept a little texture with the pistachios.
  2. If too thick, add in a tablespoon or two of water to thin. Season to taste as needed with additional salt and pepper.
  3. Serve on everything! Tacos, quesadillas, pasta, sandwiches, ect.
