Ingredients

  • Herbed Cashew Cheese
  • Sliced avocado
  • Sliced cucumbers
  • Sliced tomatoes
  • Arugula
  • Sourdough Bread (or other favorite bread)

Instructions

  1. Lightly toast the bread, then spread the cashew cheese liberally on each side.
  2. Layer with sliced tomato, cucumber, avocado and arugula leaves. Cover with other slice of bread, slice and serve!
