Ingredients

  • 6 fresh peaches, peeled, pitted and sliced
  • 1/3 cup + 2 tablespoons cane sugar, divided
  • 1 1/3 cups + 2 tablespoons all-purpose flour, divided
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup canola oil or other neutral oil
  • 1/2 cup coconut milk beverage (see notes)

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Toss together the sliced peaches, 1/3 cup sugar, 2 tablespoons flour and 1 teaspoon ground cinnamon. Pour in the bottom of a lightly greased 9×13″ pan.
  3. In a separate bowl, whisk together the flour, sugar, baking powder and salt. Add in the oil and coconut milk and whisk to just combine, taking care not to over mix.
  4. Spread the mixture over the peaches and place in the oven. Bake for 30-35 minutes until golden browned and bubbly. Remove, let cool slightly and enjoy. We love this best with vanilla ice cream on top!

Notes

I think coconut milk beverage (not canned, the kind that you get in the refrigerated section) works best here, but you can use any non-dairy beverage that you’d like.
