Ingredients

  • 1 pizza crust (I used an Organic frozen crust from Trader Joe’s that serves 2)
  • 1/3 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese (optional)
  • 1 large tomato, thinly sliced
  • 1/4 teaspoon crushed red pepper flakes (or more or less)
  • 2 cups arugula
  • 1 teaspoon chili oil (see notes)
  • salt/pepper

Instructions

  1. Place a pizza stone in the oven and preheat the oven to 425 degrees F.
  2. Thaw the crust and place on a cutting board lightly dusted with flour.
  3. Spread the ricotta cheese on the pizza crust along with a layer of thinly sliced tomatoes.
  4. Sprinkle with mozzarella cheese and parmesan cheese.
  5. Taking care not to burn yourself, transfer the pizza crust onto the pizza stone and cook for 12 minutes until golden brown.
  6. While the pizza is cooking, toss the arugula leaves with chili oil and salt and pepper.
  7. Pile the arugula on top of the cooked pizza and slice into 4 or 8 pieces. EAT.

Notes

For this pizza, I used an Organic frozen crust from Trader Joe’s that serves 2. If you use a larger crust or make your own, you will need to increase the amount of toppings. I used a red pepper chili oil for the salad, can sub another chili oil or good quality olive oil.
