Ingredients

  • 3 tablespoons olive oil
  • 4 cloves garlic cloves, thinly sliced
  • 2 carrots, spiralized or thinly sliced
  • 1 red bell pepper, spiralized or thinly sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • salt/freshly ground pepper
  • 2 zucchini, spiralized
  • 2 yellow squash, spiralized
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup chopped fresh basil
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. In a large skillet over medium-high heat, heat the olive oil. Saute the garlic for 1-2 minutes until fragrant. Add the carrot and bell pepper noodles, broccoli and cherry tomatoes and stir gently. Allow to cook for 3-4 minutes until the noodles begin to become tender. Season and salt/pepper.
  2. Add the zucchini and yellow squash noodles. Toss everything together and cook for another 3-4 minutes. Add the red pepper flakes and season again with salt and pepper.
  3. Remove from the heat. Add in the basil and Parmesan (if using), toss one last time and serve.
