These soft, gooey strawberry rolls are made with fresh strawberries and topped with a sweet berry glaze. Easy to make from scratch, and simple to make vegan!
3tablespoonsfreeze dried strawberry powder** this is for color and extra flavor. It about a 1/2 bag blended to powder form
Strawberry Filling:***
2cupsfresh or frozen berries this is to make strawberry jam. You can also skip this and use store bought jam
2tablespoonsmaple syrup, agave or honey
2tablespoonsroom temperature butter*
1teaspooncinnamon
Strawberry Glaze:
1/4cupcream cheese*, optional
1cuppowdered sugar
3tablespoonsfreeze dried strawberry powder**
3tablespoonsfresh lemon juice
Instructions
Make the Strawberry Jam:
In a medium saucepan, combine strawberries and agave, maple or honey. Cook down until all water has evaporated, about 30 minutes. Set aside to cool. Then mix in the butter and cinnamon to help thicken.
Make the Strawberry Rolls:
In the base of a stand mixer fitted with a dough hook, combine the yeast and warm milk. The milk should be between 105–110°F (40–43°C) to properly activate the dry yeast.
Add all of the remaining ingredients to the mixer and mix until dough is smooth and tacky, about 7-10 minutes.
Allow the dough to rest for about 30 minutes so gluten can relax.
On a well-floured work surface, roll your dough into a rectangle 9x15. Brush with room temp butter and sprinkle of cinnamon, if you want more of a cinnamon flavor.. Top with the strawberry puree or jam.
Using a pizza cutter, cut dough into 6 strips and roll up, away from you.
Place in a greased 9-inch square or 9x13 baking dish and let proof until double in size, for about an hour.
Tent the pan with foil to shield the tops from browning, and bake at 350 degrees for about 30 minutes. Remove the foil halfway through; Internal temp should be 190.
Make the Glaze
Whisk together all of the ingredients for the glaze and top with the strawberry glaze and dig in!

*Can use dairy-free options for all of these ingredients: yogurt, cream cheese, milk and butter. These strawberry rolls were tested using dairy-free options as an option and works great! The cream cheese is optional in the strawberry glaze, you can also use a simple strawberry glaze with just powdered sugar, strawberry powder and a little lemon juice to thin. **This is for color and extra strawberry flavor. It is about a 1/2 bag of freeze-dried strawberries, blended to powder form. I put the bag in a mini food processor and blend, then use half in the dough and half in the glaze. ***This recipe includes a quick strawberry jam, but you can also skip this and use store bought jam instead.
