Orange Raspberry Popsicles! How beautiful are these sunset-inspired popsicles? With gradients of orange, red, and pink. You can use fresh or frozen berries.
2cupsraspberries, or strawberries, thawed if frozen
2cupsorange juice, divided
1peach, pitted and chopped
Maple syrup, for additional sweetness, optional
Instructions
Place the strawberries in a blender along with 1/2 cup of the orange juice. Blend until pureed. Taste, if you want a sweeter popsicle, add in a little maple syrup.
Pour into a prepared popsicle mold, Depending on the size of your mold, it should fill about halfway up the mold. Place it in the freezer for an hour to help set it up so you can layer it for the stripe look.
Rinse out your blender and add the remaining orange juice and peach. Blend until pureed. Add on top of the strawberry layer, then place the popsicle sticks in and cover. Freeze for at least 6 hours or until frozen.
Notes
I make this with and without the maple syrup. Sugar lowers the freezing point of the popsicles, which reduces the amount of large ice crystals. When I make these for my kids, I leave out the maple syrup but when I make them for friends/adults, then I add in a little to make for a better popsicle experience with smaller ice crystals.
