Instant Pot Vegan Lentil Tacos! If you like my lentil tacos, then you'll love this version made in the Instant Pot. A healthy dinner, ready in just 30 minutes.
2cupsdried brown or green lentils, rinsed and picked through to remove any debris
3 1/2cupsvegetable broth
1/2cupred salsa of choice, I use my Canning Salsa for this!
1teaspoonground cumin
1teaspoonchili powder
1teaspoongarlic powder
1teaspoononion powder
1/2teaspoonsmoked paprika
1/2 - 3/4teaspoonsalt, as needed
8warmed tortillas
Taco toppings of choice, we love shredded lettuce, chopped tomatoes, jalapeños and shredded cheese (regular or dairy-free
Instructions
Place the lentils, vegetable broth, salsa, and spices in the base of an instant pot or pressure cooker and seal. Hit the manual button and cook on high pressure for 16 minutes.
Quick release, then stir. Add the salt, then taste to adjust. Depending on the saltiness of your broth, then you may need more or less salt. I typically use a low-sodium broth and then add salt to taste.
Serve on warmed tortillas with toppings of choice.
