Chocolate Covered Snickers Bites! These naturally sweetened chocolate date bites taste like candy. Peanut stuffed dates, dipped in melted chocolate.

We made it to Friday– let’s have some chocolate.

These last few months have been a really doozy; a brutifal time to use a phrase from my favorite Glennon Doyle. Both beautiful and brutal. I think I’ll look back at this period and remember how great it was that I got to be hunkered down with my little family, and also remember the chaos and uncertainty that was the day-to-day. 

And so, we’re eating a lot of dessert around here. A little cap to the day that’s typically filled with some type of chocolate (or, the Scandinavian Swimmers gummies from Trader Joe’s if I remembered to stock up that week. Those things are amazing!

These chocolate peanut dates, which I call my chocolate covered Snicker’s bites really hit the spot when you need something sweet but don’t have the effort to make much else. 

Open a date, stuff it with peanut butter, cover in melted chocolate and freeze. I keep a big batch in the freezer for nightly (and mid-day) snacking. 

Chocolate Peanut Butter Dates

If you know me, then you know how much I love Snicker’s. While I can’t remember the last time I actually had a Snicker’s bar, the caramel + chocolate + peanut taste is one of my favorite combinations.

It’s why I created this Snicker’s Shake recipe (a must try if you haven’t already) and why 99% of my dessert preferences include chocolate in some way. Sweets are just better when there is chocolate and nuts around.

Dates

I’ve been making these treats for so long, that I can confidently say that most nut butters will work in these. Try almond butter, cashew butter or even tahini for a different spin.

The chocolate coating is easier than you think, just a little chopped chocolate melted with some coconut oil. You can use any kind of chocolate that you want. I typically have a bunch of chocolate bars lying around that I chop up before adding with the oil to microwave and melt. Chocolate chips and chocolate chunks will work!

Obviously, to keep these vegan for my dairy-free friends, you’ll want to make sure you choose a vegan chocolate.

That’s it! Dunk the stuffed date into the chocolate, then place on a parchment lined baking sheet to harden. If you don’t have any wax/parchment paper then a silpat lined baking sheet also works. None of the above? That’s fine too, you may just have a little harder time popping the dates off the plate once they’ve hardened. But, it will still work. I know ingredients and kitchen things are still hard to find, so don’t sweat the substitutions. 

 And there you go! Chocolate peanut dates, aka Snicker’s Bites. As I type this, my mind suddenly thinks that we can recreate these into some type of frozen Snicker’s Ice Cream bite. Gosh, do you remember those? I don’t know if they sell those anymore, but a Snicker’s Ice Cream Bar was my go-to choose basically all of middle school. I’m going to work on it…

PS– I always get asked where I buy my dates. I think that Trader Joe’s has the best prices on dates, so if you live nearby then I recommend trying there. Aldi’s tends to also carry dates, but that can be hit or miss. Medjool ones are the best for this snack.

Chocolate Covered Snickers Bites! These naturally sweetened chocolate date bites taste like candy. Peanut stuffed dates, dipped in melted chocolate.
Servings: 12 dates
Prep Time: 15 minutes
Total Time: 15 minutes

Equipment

Ingredients 

  • 12 medjool dates, pitted
  • 1/3 cup creamy or crunchy peanut butter
  • 1/8 cup peanuts, plus more for garnish
  • 1/2 cup chopped chocolate or chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Pit the dates and place on a parchment lined or silpat lined baking sheet or large plate.
  • Scoop some of the peanut butter into the dates, then stick a peanut into each of the dates. Repeat until all dates are stuffed.
  • Place the chopped chocolate and coconut oil into a medium microwave-safe bowl and place in the microwave for 30 seconds. Remove and stir well, then place back into the microwave for another 30 seconds, stir and remove. Take care not to over microwave the mixture. Usually 1-2 times will work, with stirring in between.
  • Dunk (or drizzle) the date into the melted chocolate, then place back on the lined baking sheet. Repeat with the rest of the dates. If there is any leftover chocolate, I usually drizzle the remaining over the dates then sprinkle on chopped peanuts.
  • Place into the freezer and let harden, for 1 hour. Remove and place in a freezer-safe container to enjoy!
