Nine of my favorite, healthy farro salad recipes perfect for all seasons. If you are looking for farro salads bursting with fresh fruit and summer produce, then you’ve got to try my blueberry and farro salad or cherry farro salad. For the holidays and cooler weather, my Jeweled Farro Salad and Warm Farro and Kale salad are huge hits with readers.
Farro is a high-protein, high-fiber whole-grain wheat that comes in three main forms in the grocery store: whole farro, semi-pearled farro and pearled farro. It is not gluten-free. Farro can be applied to different types of wheat grains: einkorn, emmer and spelt. It has a nutty flavor with a chewy texture and works in many of the same recipes that use quinoa, brown rice or other whole grains.

Because of possible label confusion on which type you are getting, I recommend going by the package directions for cook times or by taste– when farro is done, it’s done. The farro that I buy from Bob’s Red Mill takes 30 minutes to cook, but the one from Trader Joe’s takes 10.
If you are lucky enough to find actual whole farro, you’ll have better success if you soak it overnight first, like beans, before cooking. To cook, rinse farro then place in a medium sized pot along with cooking liquid of choice, like water or broth.
For this recipe, you’ll use roughly 1 cup of uncooked farro and 3 cups of water or broth. Bring to a boil, then reduce heat , cover and simmer until tender and chewy. The cooking time depends on what type of farro you are using: pearled typically takes 15 minutes while semi pearled takes 25-30.
The Best Summer Farro Salad! A healthy vegan farro salad with red cabbage, carrots, broccoli, fresh herbs and a spicy peanut sauce. I made this for friends recently and they all raved about how much they loved this one. If you like my Peanut Tofu Buddha Bowl, then you will like this one– it’s almost the same peanut sauce. For any peanut allergies, you can sub in almonds and almond butter for the peanut butter.
As with most salads, this one is customizable based on what you have in the house or what looks good at the market. This farro salad is packed with so much texture and vibrant colors!

A healthy vegetarian grain-based salad with farro, cucumber, artichokes, olives, herbs, sun-dried tomatoes and my tangy Greek garlic dressing. It’s easily vegan omitting the feta cheese or using a dairy-free option. The perfect side dish or light lunch.

A delicious potluck salad for summer with fresh cherries, farro, arugula, hazelnuts, feta and a tangy molasses dressing. As with all of my vegetarian recipes, you can omit the feta or replace with a vegan version.
As much as I love cherries on their own, they shine in this hearty grain salad that’s perfect as a side or main dish. Try it with my grilled tofu kebobs with mint pesto for a fun summer meal.

This simple salad really doesn’t have much of a recipe. Roast the sweet potatoes, cook the farro, then sauté together and toss in dressing. This vegan meal is super nourishing and healthy. Roasted squash sautéed with kale and farro, then tossed in a silky orange and miso dressing. A must make whenever you are craving a salad but want something warm.
You are going to love the addition of miso in the dressing. It’s salty, umami goodness that’s hard to replicate in plant-based recipes.

Char the corn on the grill (or a grill pan/broiler) then remove the kernels. Toss with the other ingredients and a fresh lemon juice dressing and that’s it!
