Crispy Buffalo Potatoes with dairy-free ranch dressing! These vegan potatoes are PERFECT for game-day or a crowd pleasing appetizer.

As the wife of a die-hard Packer fan, my Sunday afternoons are usually spent at the park with Vander so BL can enjoy the big game alone. It’s an agreement we’ve come to accept over the years; I could care less about football and he would much prefer to enjoy the festivities solo.

V and I set off for adventure and I leave BL with a plethora of snacks (and a stocked beer fridge.) The usual suspects are always there: a dip or two, maybe a nacho platter, or chili in the slow cooker with crushed chips, cheese and salsa for him to top till his hearts content.

Last week, I set out these crispy buffalo potatoes with my homemade ranch dressing as the perfect plant-based option for wings! BL loves the flavor of wings and I knew they he would love these crispy Creamer potatoes coated in a spicy buffalo sauce.

These crispy buffalo potatoes are so simple and easy to prepare. They work for a crowd and for dad on the couch. I prefer them with my ranch dressing, but a classic pairing of blue cheese and buffalo potatoes would also be delicious!

You could even get really fancy and set up a crispy potato bar with different sauces (try honey BBQ or Sriracha) and a few dips.

How to make Crispy Potatoes

This recipe is so easy, it’s almost silly to call it a recipe. The key is using The Little Potato Company potatoes. I’m partial to the Boomer Gold varietal with it’s golden skin, velvety flesh and naturally buttery flavor but know that almost any of their Creamer potatoes will work. Head to their store locator to see where you can grab a few bags; if you’re local to St. Louis, I find them at Schnucks, Dierburgs and Costco!

Toss the potatoes with olive oil and a pinch of salt and pepper until well coated. The other beauty of using The Little Potato Company potatoes? They are ready to go when you open the bag. No cutting or peeling required.

Place them on a baking sheet and cook until crispy, about 30 minutes. The skin will become crackly and crispy and the insides will become creamy and hot. The toss with a little melted butter and your favorite buffalo hot sauce until well coated. That’s it!

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Toss the potatoes with olive oil and pinch of salt and pepper until very well coated. Place on a single layer on a baking sheet and roast for 15 minutes, then shake the baking sheet to loosen the potatoes and cook another 10-15 minutes until very crispy.
  3. While the potatoes are cooking, melt together the butter and hot sauce in a large bowl.
  4. Remove the potatoes from the oven and immediately place the potatoes in the butter bowl. Toss to coat.
  5. Serve hot with ranch dressing!
