I love sandwiches, especially to pack for lunch. Is there anything better (or easier) than a sandwich for lunch? Even though I no longer eat meat, I still crave healthy, filling sandwiches loaded with plant-based proteins like tofu, tempeh, seitan and beans along with plenty of crunchy vegetables and creamy sauces.

These Tempeh BLT sandwiches are SO delicious. Homemade tempeh bacon with lettuce, tomato and creamy dairy-free mayo. My guess is that if you aren’t a full-on vegetarian or plant-based eater, then the idea of making bacon out of tempeh might seem a little foreign. However, this is one of my favorite ways to eat tempeh and highly recommend trying it! My 2-year-old daughter loves this bacon and eats it by the fist-full.
