Ingredients

  • 2 ripe peaches, pitted and diced
  • 2 medium or 1 large yellow tomato, cored and diced*
  • 1/2 cup red bell pepper, finely diced
  • 1/3 cup red onion, finely diced
  • 1/4 cup fresh cilantro, finely chopped
  • 13 habanero peppers (depending on how spicy you like it), seeded and finely chopped
  • Juice and zest of 1 lime
  • 1/4 teaspoon salt

Instructions

  1. Add all ingredients together in a large bowl. Gently toss together, then season to taste with more salt or lime juice as desired.
