It’s popsicle season! And these sunset popsicles are so refreshing and beautiful. With layers of raspberry, peach, and orange, these popsicles are a must on sweltering summer days.

Because of the striping, they take a bit more time to assemble than other popsicles, like my acai popsicles, but it’s not hard. You just have to let one layer set up slightly in the freezer before adding the next.

That said, you don’t have to do this if you don’t want to. You won’t get the sharp contrast in layers, but the densities are different enough that you’ll still get a pretty swirled red and orange effect.

These orange raspberry popsicles are lightly sweetened and just so refreshing on hot, humid days.

Tips for Success

Stand-up molds work best for these banded popsicles as a flat mold won’t layer the same way.

Since fresh fruit is abundant right now, I used a mix of fresh and frozen to make these popsicles, but you can also use all frozen to enjoy these popsicles all year long.

Sunset Orange Rasberry Popsicles

Orange Raspberry Popsicles! How beautiful are these sunset-inspired popsicles? With gradients of orange, red, and pink. You can use fresh or frozen berries.
Servings: 10 popsicles, depending on mold
Prep Time: 10 minutes

Ingredients 

  • 2 cups raspberries, or strawberries, thawed if frozen
  • 2 cups orange juice, divided
  • 1 peach, pitted and chopped
  • Maple syrup, for additional sweetness, optional

Instructions

  • Place the strawberries in a blender along with 1/2 cup of the orange juice. Blend until pureed. Taste, if you want a sweeter popsicle, add in a little maple syrup.
  • Pour into a prepared popsicle mold, Depending on the size of your mold, it should fill about halfway up the mold. Place it in the freezer for an hour to help set it up so you can layer it for the stripe look.
  • Rinse out your blender and add the remaining orange juice and peach. Blend until pureed. Add on top of the strawberry layer, then place the popsicle sticks in and cover. Freeze for at least 6 hours or until frozen.

Notes

I make this with and without the maple syrup. Sugar lowers the freezing point of the popsicles, which reduces the amount of large ice crystals. When I make these for my kids, I leave out the maple syrup but when I make them for friends/adults, then I add in a little to make for a better popsicle experience with smaller ice crystals.
