Scale

Ingredients

  • 3 tablespoons olive oil
  • 1.5 pound bag Purely Potato variety from The Little Potato Company, halved
  • 1/2 teaspoon garlic powder
  • salt and pepper
  • 1/2 white or yellow onion, thinly sliced
  • 1 package (4 links) vegan sausage of choice, sliced
  • 1 bell pepper, thinly sliced
  • fresh parsley, for topping

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the potatoes along with a generous pinch of salt, pepper and the garlic powder. Cook, stirring often, until the potatoes are softened and the edges are browned and crispy, about 15 minutes. Transfer potatoes to a plate.
  2. Heat the remaining tablespoon of olive oil to the skillet. Add in the onions and peppers along with another pinch of salt and pepper and cook until the peppers are softened, about 5-7 minutes.
  3. Push the vegetables to the side and add in the sliced sausage links. Cook for 3-4 minutes per side until crispy and browned. Add the potatoes back to the skillet and stir together, seasoning to taste as needed with more salt/pepper/garlic powder.
  4. Sprinkle with parsley and serve!

Notes

If you can’t find the Purely Purple bag of potatoes from LPC then any type of little potato will work, try the Boomer Gold or Dynamic Duo!

I prefer either a Field Roast Italian or Apple Sage Sausage or this or Beyond Sausage.
